Chocolate Raisin Bars

For the crust
- 1 cup Flour
- 1/4 cup Brown sugar
- 1/4 tablespoon Salt
- 1/2 cup Butter (cut into small slices or chunks)
For the topping
- 1 cup Brown sugar
- 2 tablespoons Flour
- 1/4 tablespoon Salt
- 1/2 tablespoon Baking powder
- 2 Eggs
- 1 tablespoon Vanilla
- 1/2 cup Chocolate chips
- 1/2 cup Raisins
- 1/4 cup Chopped pecans, walnuts or almonds (optional)
For the crust
In a mixing bowl, combine the flour, brown sugar and salt. Cut in the butter until coarse crumbs form. (Or, if you're using a stand mixer, mix on low for about 2 minutes.)
Press into the bottom of a 9x13 casserole dish. Bake at 325 degrees for 15 minutes, until golden brown.
For the topping
While the crust bakes, add the brown sugar, flour, salt, baking powder, eggs and vanilla to the mix bowl. Stir or beat until well combined, about 1 minute. By hand, stir in the chocolate, raisins and nuts, if using.
Pour the topping over the hot, baked crust and return to the oven. Bake at 325 degrees for 18-22 minutes, until golden and set.
Cool bars completely before cutting.
- Make sure to let the bars cool completely before cutting so that they have a chance to set up properly.
- For a decadent dessert, warm individual chocolate raisin bars for a few seconds in the microwave and serve alongside ice cream or topped with a dollop of whipped cream or clotted cream.
